Grass Fed Beef

Our beef is exclusively from our own herd of  Angus cows.   The calves are raised on a total grass and forage diet.  They are never implanted with hormones or given growth promoting antibiotics. The calves we market as grass fed never receive grain or by-products of any kind. Our goal is to produce a high select/low choice grade product.   Juicy, tasty, and tender with great beef flavor. It is processed at a USDA inspected facility, dry aged at least 14 days and then vacuum packaged. The Health Benefits of Grass Fed Beef

The meat from animals raised exclusively on pasture is high in omega-3 fatty acids.  This is the good type of fat.   The  same type of fat that makes wild salmon good for you.   Grass based meats are also high in conjugated linoleic acid.  CLA has been shown to fight cancer.

 
Dry Aged Beef

There is more that goes into producing top quality beef than just placing a steak in a package. One of the differences in the beef we provide our customers over the standard fare is the aging process it goes through.Standard beef in the grocery is wet aged. This is a process of bagging or packaging the beef shortly after it is chilled. It ages as it travels to the grocer and sits in the meat case. Which generally means it is not aged at all. The dry aging process that we use places the carcass in a cooled locker for between 14 to 21 days. It allows some of the moisture to escape, concentrating the beef flavor. It also allows the animal to naturally tenderize. In days past this was the standard way beef was handled and it produces higher quality beef with a more robust taste.
